Battered Catfish

2 lb catfish fillets, cut in half
3 cups milk
1 tbsp buttermilk powder (just substitute buttermilk for this and the milk, these are just what I used)
juice of 1 lemon
1 tbsp horseradish
2 tbsp chives
1 tbsp pepper

2 eggs
3 cups flour
1 tbsp baking powder

cooking oil

Mix all of the ingredients at top to make marinade, marinate fish for 2-6 hours. Take fish out of the marinade, and mix it with eggs, flour and baking powder. In a pot or fryer, heat oil to 375 degrees. Dip fish pieces in batter so that they are very lightly but evenly coated, and fry for 3-5 minutes each. Makes enough for 4-5 people.

Tartar Sauce- combine the following:
1 cup mayonnaise
juice of 2 lemons
1 tbsp horseradish
1 tbsp chives
anything else you want
make enough for like a bunch
